HA found an egg in the chicken coop this morning. The chickens have started to lay! (Or at least one has.)

I had been told to expect the first eggs to be small and misshapen, but this egg is a beautiful, pale green, medium-to-large size specimen. I think I will hard-boil it.

Here’s the First Egg being fried, on the left. Both the yolk and white are firmer than the commercial egg on the right, and the yolk is a bit more orange than the yellow commercial yolk.

HA made it into a breakfast sandwich. It was delicious, as is most everything she makes, but I can’t say that I would have recognized the egg as extraordinary if I hadn’t known I was eating the First Egg.

Two days later, there are two new eggs. One is pale green, the other light brown.
